Here's a recipe that is a winner for my picky children!
It is super easy and yummy!
sweet and tangy chicken wings
{adapted from here}
I made it using broiler method and most recently the grilling method. it's finally nice outside to use the grill again. {In the summertime, I grill once to twice a week. the children love simple grilled recipes}
3 lbs of chicken wings
1/4 cup of apricot preserves
1/4 cup of balsamic vinegar
1/2 tsp of ground ginger
pinch of salt
+/- 1/4 tsp of cayenne pepper {I added this and the children did not taste a difference... omit if you're afraid children are going to scream with the spicy food}
I mixed the apricot preserves, balsamic vinegar, ground ginger, salt and cayenne. I added the chicken wings and tossed them to coat them.
Grill method: medium-low heat -- hubs grilled the chicken x 25-30 minutes turning occasionally until cooked through. The rest of the marinade is used baste the wings in the last 10 mins of grilling.
Broiler method: place in broiling pan about 5-6 inches from heat.
I broiled the chicken x 25-30 minutes, again flipping the wings at least once halfway through. I used the rest of the marinade mixture to baste the chicken.
This recipe is children approved and husband approved.
For more substantial meat for those meat lovers out there, I used chicken drumsticks as well with this sauce. My family gobbled up dinner!
