honey sesame chicken nuggets










These are super easy to make but time consuming. 

Prepping the nuggets take the longest but it's super easy. 

I preheated the oven to 400 degrees. I cut one lb of chicken tenderloins (Costco pack x 2) into bite sized pieces. I seasoned chicken with salt and pepper.

I'm just like that.

I love, love, love faux fur vest. It's my fave of the winter season. I am wearing my faux fur vests until I am sweating and getting dizzy because of the heat. {exaggerating here...} It's still 40s here in the midwest so I can get away with longsleeves and vest to keep my back warm... what do y'all think? yay? nay?

1. 7 months old
Lucy loves the camera! It can be the big camera or my iphone  -- she's ready to give me her biggest smile. She's also a snapchat veteran. She and her Kuya Bastian love to snapchat.


2. we started solids
 She loves her pureed baby food. Bananas and pears are her faves.
That does not mean we are not going to give her her green beans and peas. Sorry girlie. You will have to keep trying those greens!. Veggies are good for you.

4. Lucy and I were loners today.
The middle two were with my in-laws since yesterday. They did not come home until it was time for Isabel's ballet at 5pm.

We are so, so blessed to have our in-laws nearby.
Thank you so much Lolo and Lola for keeping the middle two. I have nothing planned today. But I made sure to make way on all my to-do list.

Patient messages done!
(some) cleaning done!
Reading done!
now blogging!

It's funny how i accomplished all these things with one child. Whereas when i only had Daniel, I was freaking out, wondering when I will be able to do my to-do list.  God truly gives us the grace to take care of the little souls he gives us.












5.  It's Superbowl weekend.
I am making a taco dip and taco meat.

here's how I make my taco dip.

mix 8 oz of sour cream and 8 oz of (softened) cream cheese with 1 packet of taco seasoning.
place at the bottom of the dish.
layer rest of ingredients in this order:

salsa
green onions
shredded mozarrella and cheddar cheese or the mexican cheese package already available in the dairy section
diced tomatoes

Somebody suggested I add refried beans. I am thinking of putting that at the very bottom. What do you all think? where should I put the refried beans? at the very bottom? or in between the cheese/taco layer and the salsa??













6. Older bro
Sebastian means well. He smothers his sister with kisses. smothers***
He gets close to her  (not even kissing her yet) and she starts grunting.

He was not happy that  I was only taking photos of his little sister. Remember this photo? He looked like that. He perfected that look. He should trademark it SJ pout.

Next thing -- he sat next to Lucy and posed for the photo. of course, he deserves to be on this post. I like it when people take the initiative.









7. Lent starts next week!
I will be writing a post about my spiritual plans for Lent. I like to make lists so might as well put it out there... who's gonna make me accountable?

this week's posts and more

Hello Friday-eve!

I am joining the SQT crowd for my own quick takes a day early... 

1. This week is definitely family-week. My son celebrated his 6th birthday and lost two teeth in 4 days! My sister is still here for their summer vacation, and so is my grandma. My dad drove 13 hours to spend a week with us too. We travel in big groups now-a-days!



2. I am posting this early because tomorrow is a special day. Part II of the how-we-met story will be published! Right behind birth stories for my fave reads are How-We-Met novellas. I just read Kathryn's and I love it! I cannot wait till she posts the entire series. (disis how-we-met part I here)



3. So this has been circulating all over FB. My sis shared it so I finally read it. It goes through what doctors (even I) experience at work. I do not like it when I am behind. So I thank all my patients for their patience. I do take my time and make sure I do my best with their management. But I agree with the post, if there's a complaint, I would like to hear it... I am sure my staff/clinic will welcome constructive comments too. 



4. To answer your question: are you getting sleep?
yes and no. I have shifted my waking times bec of Lucy. Thank you, thank you, thank you to my FIL for taking the older 3 for a couple of days. TY also to my dad for watching them from7-9a while i rested with Lucy. My favorite time to watch her sleep is 7-9a. i just lay in bed, maybe doze off for a few mins, maybe read a little and then glance at her sweet face. I am in love. I forget that she is awake from 10p-1:30a. Like clockwork, she does not fail. 

She is 4 weeks old tomorrow. whaaa? so hard to believe. Didn't i just push her out?


5. Our friends are the best. They organized a care calendar to make sure our family is fed!
Here are a few recipes worth sharing:
  • Baked orzo with fontina and peas - my friend added roasted chicken. it's soooo good! 
  • Marinaded pork with mango salsa - recipe soon, I still haven't asked my friend for it.
  • Oatmeal cookies with dark chocolate and cherries - I probably linked the correct recipe, again I have to confirm with her. These are not too sweet which I like. And isn't oatmeal supposed to be good for nursing?
  • My mom and grandma have been so generous giving us Filipino food. We have enjoyed Beef Nilaga, Sopas, and Kare-Kare (you don't have to make this one with ox-tail. I make mine with regular beef meat). 
  • Since we have all those meals, I had a chance to bake these banana crumb muffins. SJ loves these muffins!

6. My blogger friend Christy and I are hosting the first physician moms blog hop on August 5th. I wrote a preview post this week. For my physician mom readers, make sure you join us and link your posts. it's all about introducing yourselves to the group for the month of August. If you know of any other physician mom bloggers, spread the word!

banana crumb muffins








Thank you so much to our family and friends for bringing us food -- as in meals with entree and dessert. Because of their generosity, I found time to bake. When do I get to bake? Rarely nowadays.

I found 3 over-ripe bananas in our fruit basket. Again another rare occasion. I asked the children if I could make banana nutella muffins or the ones from our recent brunch with C---- (friend).  They chose the ones from C----'s unanimously.

I am glad I made them because they have saved me during breakfast and snack time. Specially my good eater, Sebastian. Instead of asking me or pointing at the counter, I see him coming back from the dining room carrying his siblings' left over muffins! (yes, I know I am horrible) I should have cleaned up their left overs or put them away... Smart, hungry Sebastian knew where to find the goodies.

I just used this recipe. I did not change anything except I was able to make 12 muffins instead of 10. The kids LOVED the muffin top aka crumb part. No wonder because it's sugar! It's too sweet for me. Maybe next time I won't pack the brown sugar as much.

jambalaya {recipe}

Mrs. wanna-be chef is back. I made jambalaya this weekend. Costco does not carry andouille sausage. bummer. so this is shrimp (only) jambalaya.





Do not be scared of the list of spices. You probably have all in your pantry already. I doubled the recipe because we love left overs. For this recipe, I used both canned diced tomatoes and fresh roma tomatoes.

Let me know what you think once you've made it.

Ingredients:
1 tbsp olive oil
1 cup chopped onion
1 cup chopped red bell pepper
1 tbsp minced garlic
6 oz andouille sausage, sliced
1 cup uncooked white rice
1 tsp paprika
1 tsp freshly ground black pepper
1 tsp dried oregano
1/2 tsp onion powder
1/2 tsp dried thyme
1/4 tsp garlic salt
1 bay leaf
2 cups fat-free, low Na chicken broth
3/4 cup water
1 tbsp tomato paste
1/2 tsp hot pepper sauce (I used tabasco)
1 {14.5 oz} can no salt-added diced tomatoes, undrained (or use fresh!)
1/2 lb peeled and deveined shrimp
2 tbsp fresh parsley, chopped


To prepare:
Heat Olive oil in large Dutch oven over medium high-heat.
Add chopped onion, bell pepper, minced garlic, sausage. Saute x 5 minutes or until veges are tender.
Add rice and ingredients from paprika through bay leaf (7 ingredients). Cook x 2 minutes.
Add broth, water, tomato paste, hot pepper sauce and diced tomatoes. Bring to a boil.
Cover, reduce heat and simmer x 20 minutes.
Add shrimp, Cook x 5 minutes.
Let stand x 5 minutes.
Discard bay leaf. Stir in parsley.
Enjoy!

this week's takes

Misc things of what I am thinking and what's going on this week en mi casa.

1. such downer news all over NPR, nightlynews, social media... And my name is plastered everywhere... seriously. The good thing, I was born first. And I am named after the Egyptian Goddess (just in case you are wondering)

2. now that that is out of the way (I just have to get it out of my chest), we can celebrate life and God's goodness. I am a cup-half-full person ~ most of the time. I still believe in God's plan amidst all this crisis in the middle east.

Did you see my post about an angel who paid the tab for the annual mom-son date? well, don't feel left out and read it here.

3. I have a  kindergartener, people.
Mr. squinty eyes woke up without a fuss, followed directions and survived first day of kindergarten. We are so proud of him. It's the same school as his TK last year, so he was not stressed out or anxious during drop off. He actually ignored my kiss and goodbye once he joined his class at the gym.



4. I have 5 weeks before the boards.... eeeekkkkk.

5. #shereadstruth
Thanks to Jenna of eatliverun, I was introduced to this devotional website. We are reading the Letter to the Hebrews right now. What I am excited about is the upcoming study on Hosea. Will you join us?



6. I finally found the best Thai Coconut Curry Soup after trying a few different recipes. Here's my take:
Boil 4 cups of Low Na chicken broth/stock with 2 tbsp of fish sauce and 1 tbsp light brown sugar. Cover, set aside.
In a dutch oven, brown 1 lb chicken breast. Transfer once browned.
In the same dutch oven, add 2 tsp of red curry paste (I used the one from the jar) and 2 tbsp of grated ginger. Cook just till fragrant ~1 minute.
Add warm broth to the dutch pan, add chicken and bokchoy stalks. Cook for ~10 minutes until chicken is fully cooked.
Take the chicken out again and shred it. Add 2 cups of light coconut milk and mushrooms in the dutch oven (I used portobello, but you can use white). Cook for 5 minutes.
Add the chicken and bokchoy leaves once simmered. Squeeze about 1/2 to 3/4 lime (depending on the taste) and add salt and pepper too if you like. I omitted the salt at the end. The fish sauce was salty enough for me. Garnish with cilantro.

^I did not get bokchoy or cilantro at the store (boo!) so that's missing... obviously.

nutella in my muffin!

Ever since my sister showed me this recipe, I was hooked!




I have made these a few times. They are dangerous! They will mess up your eat-healthy and whole diet. So be forewarned.











I followed this recipe. I substituted the vege oil to butter (yikes) because we ran out of vege oil... we only have coconut oil. I was not sure how my muffins will turn out if I use coconut oil. With this most recent baking episode, I used 3 large over ripe bananas instead of 4... because that's all we have left. And these muffins are still yummy!
