I am currently reading the book of Esther.  I know the story of Queen Esther and how she saved the Jewish people but I must have skipped the part where she was kept at the harem when she was 14 years old (believed to be her age when she met the King of Persia).

Not everything on the Bible is pretty. Some details even make my skin crawl. But it's not enough to stop there. God is in charge. Circumstances may not be the best thing but He will always find a way to show His might and power ~ if we just let Him!

I am doing the two-week study from Shereadstruth.

Sharing this simple stirfry from Blue Apron with my own modifications.


1 lb of ground pork or chicken
1 lb of bokchoy {or use green peas if you like}
3 tbsp  black bean sauce
3 tbsp sweet chili
3 tbsp sweet soy glaze (if you don't have this use soy sauce and 1 tbsp of sugar)
ginger
garlic
green onions
1-2 tbsp butter
white rice

Cook white rice on rice cooker. We are Filipinos and use a small rice cooker hubs and I bought when we got married! It's 12 years old and still working. It's so easy to use. Cook 1 cup of rice. Add 1.5-2 cups of water. Press Cook. 

Wash and dry bokchoy. Cut stems and leaves. Discard bottom inch.
Mince the garlic. 2 cloves fine.
Cut green onions, 2 stalks.
Peel and chop an inch of ginger in small pieces.

Heat drizzle of olive oil on a large nonstick pan. Add ground meat. Season with salt and pepper.  Cook x 4-6 minutes, frequently breaking meat into smaller pieces.
Add butter, garlic, green onions and ginger. Cook 1-2 mins until  everything is combined.

Add bokchoy (or your choice of veggies), black bean sauce, sweet chili sauce and sweet soy glaze + 1/4 cup of water.  Cook while stirring occasionally x 3-4 minutes until meat is cooked through.
